Since joining Marchesi 1824 in 2018, Crosara has overseen the creation of signature products and personally curated new boutique openings in Italy and abroad, ensuring the brand’s growth while upholding the principles of quality and excellence that have defined Marchesi 1824 for nearly two centuries. Located in Via Orobia 3, the Marchesi 1824 Laboratory is a historic space where the aroma of freshly baked pastries fills the air from early morning. Here, croissants are still rolled by hand, one by one, and every dough is crafted with artisanal care.The laboratory is divided into three distinct areas: the bakery, where bread and leavened pastries emerge warm from the oven; the fresh pastry section, dedicated to mignons and cakes prepared daily; and the decoration area, where desserts are finished with glazes, fruits, and elegant details. It is within this authentic, inspiring setting that the Marchesi 1824 workshops take place — moments where tradition, creativity, and craftsmanship come together to create a truly unique experience.

The experience begins with a gentle pause: a refined sweet treat to enjoy together, setting the tone for a warm and meaningful time. From there, under the expert guidance of Pastry Art Director Diego Crosara and his team, each participant will be guided step by step — learning, experimenting, and above all, enjoying the simple joy of creating together.
With a focus on delicate painting techniques and the crafting of elegant almond paste flowers, this atelier becomes more than a workshop — it is a sweet, shared memory in the making, where every detail reflects care, creativity, and unique bond.
