A world champion pastry chef and gelato master, he combines deep expertise with a refined sense of style, developing new pastry, chocolate, and gelato collections that embody the brand’s heritage of excellence.
Since joining Marchesi 1824 in 2018, Crosara has overseen the creation of signature products and personally curated new boutique openings in Italy and abroad, ensuring the brand’s growth while upholding the principles of quality and excellence that have defined Marchesi 1824 for nearly two centuries. Every detail reflects the Maison’s enduring commitment to craftsmanship, elegance, and innovation.
Located in Via Orobia 3, the Marchesi 1824 Laboratory is a historic space where the aroma of freshly baked pastries fills the air from early morning. Here, croissants are still rolled by hand, one by one, and every dough is crafted with artisanal care.
The laboratory is divided into three distinct areas: the bakery, where bread and leavened pastries emerge warm from the oven; the fresh pastry section, dedicated to mignons and cakes prepared daily; and the decoration area, where desserts are finished with glazes, fruits, and elegant details. It is within this authentic, inspiring setting that the Marchesi 1824 workshops take place — moments where tradition, creativity, and craftsmanship come together to create a truly unique experience.
The Marchesi 1824 Laboratory welcomes participants into an atmosphere of artisanal excellence, where tradition and creativity meet, celebrating the spirit and elegance of Easter through the decoration of one of its most iconic symbols: the Colomba. Before beginning, guests will enjoy a small sweet treat — a moment to relax and prepare for the experience ahead.
At the heart of the workshop is the decoration of a classic Colomba. Guided step by step by Pastry Art Director Diego Crosara and his team, participants will discover techniques, tips, and creative inspirations inspired by Easter traditions. After an initial demonstration, each guest will be free to explore their own style, experimenting with decorations, colors, and finishes, and giving life to a truly personal creation.
At the end of the experience, participants will be awarded a certificate of participation signed by Pastry Art Director Diego Crosara — a refined keepsake of a unique moment of creativity and Italian pastry artistry.
The workshop is open to both adults and children (accompanied by an adult), making it a versatile experience designed for couples, friends as well as families.
All materials are provided on site, including a complete decoration kit. Children will receive a personalized apron and chef’s hat embroidered with the Marchesi 1824 logo, while adults will be provided with a personalized embroidered apron. Each participant will also receive elegant Marchesi 1824 packaging to take their decorated colomba home.
